Winter Chopped Salad with Natural ArtiHearts

As spring approaches but the markets are still full of carrots, fennel and cauliflower (along with all the kales) here is a salad that is super healthy and even tastier. Crunchy, full of fresh herbs and a touch of spice, this salad is great as a light lunch or accompaniment for roasted meats or braised fish.

Ingredients

  • 1 can Garbanzo Beans
  • 1 pkg Natural ArtiHearts
  • 1 cup diced carrots, about 4 carrots
  • 1 cup diced fennel, about 1 fennel bulb
  • 1 cup cauliflower florets
  • 6 oz washed baby spinach

Dressing

  • ½ cup 2% greek yogurt
  • juice and zest of 1 lemon
  • 1 Tbs chopped dill
  • 1 Tbs chopped chives
  • sea salt and fresh ground pepper
  • Red pepper flakes optional

Instructions

  • Drain the Garbanzo beans.
  • Remove the ArtiHearts from the package, separate them and cut the pieces in half or quarters.
  • Combine all the ingredients except the spinach. Add the dressing and mix together so all the vegetables are covered.
  • Place a bed of spinach on a platter or on the bottom of 4 individual bowls.
  • Pile the vegetables on top and garnish with red pepper flakes or fresh ground black pepper
