Pan Fried Eggs with Potatoes, Scallions and Serrano Lime Chef Butter

Eggs are magical and delicious. When our chickens are laying we eat eggs for dinner at least once a week. And Chef Butter makes it so easy as all the flavors work well with eggs. Here we have Serrano Lime fried eggs with potatoes.
Heat a pan that you are sure will not stick. The one in this picture was my first pan purchase when I attended the Cordon Bleu in Paris circa 1980. It is a carbon steel pan that is seasoned beautifully after all these years and never sticks. It’s not pretty but I love this pan.

Ingredients

  • 1 Tbs oil (any neutral cooking oil)
  • 3 medallions Serrano Lime Chef Butter
  • 3 each creamer or red potatoes
  • 4 each scallions
  • 3 medallions Serrano Lime Chef Butter
  • 6 each fresh eggs
  • sea salt and fresh ground pepper, (optional)

Instructions

  • Heat a nonstick skillet over medium heat. Slice 3 small Yukon gold potatoes or red creamer potatoes in half and then in thin slices. Add a tablespoon oil and the potatoes and sauté until the potatoes are tender and slightly golden brown, about 10 minutes.
  • Add the scallions and sauté until just wilted, season with a small amount of sea salt and fresh ground pepper if desired. Remove the potatoes and the scallions from the skillet.
  • With the heat on medium, melt 2 medallions Serrano Lime Chef Butter spreading it around the bottom of the skillet. When the butter sizzles, crack 6 eggs into the skillet covering the bottom of the skillet.
  • Sprinkle the potatoes and scallions on top of the eggs. Once the eggs are lightly set, about 2 minutes, shake the pan to release the eggs from the bottom of the skillet and to incorporate the potatoes and scallions into the eggs.
  • Lower the heat to medium low and allow the eggs to set. Break up another medallion of Serrano Lime Chef Butter over the top and slide the whole, beautiful thing onto a plate. Cut in half and enjoy with crusty bread.

Notes

If you prefer your eggs less runny, heat the oven to 350F and place the skillet in the oven for 3 to 5 minutes or until the eggs are set.
