Mashed Roasted Sweet Potatoes with Serrano Lime Chef Butter
I have found my affinity for sweet potatoes later in life and now I can’t wait for fall so I can add them to our roasted veggies, curries and stews. This recipe is hardly even a recipe. Just sweet potato and Chef Butter but let me tell you, it is delicious. Roasting them is a little time consuming but they peel really easily after roasting in the foil and the rest is a breeze.
- 4 sweet potatoes, any color
- ⅓ roll Serrano Lime Chef Butter
- Preheat the oven to 400F. Wash and poke the sweet potatoes with the tip of a knife. Wrap them in foil and bake in the preheated oven 30 minutes or until soft when squeezed. Remove from the oven and allow to cool 5 to 10 minutes. Unwrap and using the tip of a knife make a slice down the middle, just puncturing the skin.
- With the knife, lift the skin off around the length of the potato. You can wear gloves if your hands are sensitive to the heat. Place the potatoes in a pot on the stove over low heat and add the Serrano Lime Chef Butter. Using an electric hand mixer, combine the Chef Butter and the sweet potatoes until smooth. Serve immediately or reheat later when the rest of dinner is ready.
