Veggie Pappardelle with Basil Garlic Chef Butter

If you love vegetables as much as I do, sometimes you over buy at the Farmers Market. My refrigerator drawers get over crowded with wonderful veggies that need to be used and Chef Butter makes it super easy to create a delicious dinner with minimal chopping, and thinking. All the flavor is in the butter!

Serves 2

Ingredients: 

(This is what I had in my fridge, your inventory will be different but surely as delicious.)

Green onions
Romano Green Beans
Pink Oyster Mushrooms
Zucchini squash
San Marzano tomatoes
2 Tbs olive oil
1/4 pound pappardelle pasta, cooked and drained. (Keep 1/2 a cup of the pasta water)
Kosher salt
Fresh ground pepper
4 medallions Basil Garlic Chef Butter

Method:

Rough chop all the vegetables. Heat the olive oil in a large pan and sauté the vegetables until they start to wilt. Add the pasta water and continue to sauté until the vegetables are cooked to your liking. Add the cooked pasta and the Chef Butter and mix until well combined. Serve hot with a bottle of rosé.
